Easy & Fast Pizza Dough!

This recipe is not only amazingly delicious  but it's fast!!! Much quicker than ordering a pizza! 


First, mix these three ingredients together:

1 cup warm water
1/4 oz yeast (about 1 Tablespoon)
1 teaspoon sugar

Allow this to sit for about 10 minutes. The top will get very frothy.

Second, add the following:

2 tablespoons olive oil
1 teaspoon salt
2.5 cups flour 

Knead this all together until you get the glorious dough ball you see above. Let it sit for 5 minutes to rise a bit.

Now you're ready to roll... Literally ;-)

Bake at 400' until golden brown.

Fresh & Easy Salsa!

Here is the quick ingredient list for my salsa recipe!

Otherwise all you need is listed below:

Tomatoes (peeled, cut and deseeded)
Jalapenos (optional)
Onion
Cilantro
Lime
Garlic
Salt (and pepper if you'd like)

Pulse the ingredients together in your blender and ENJOY!


Salsa is one of those things that is 100% to taste!  Some people like cilantro, some don't. Some people love it hot (ME!!) and some don't.  Play around with it... see what YOU love the most!

White Chocolate Raspberry Crockpot Oatmeal

If the title didn't have you drooling the picture will!



This has to be top 5 best recipes I have ever created!! 

Seriously. AMAZING! And outside of the chocolate chips relatively guilt free!!

Here is what you'll need:

3 C Of your favorite milk (coconut, cows, almond, etc)
2 t Vanilla
1/2 C Honey 

1-2 t Salt
1.25 C Steel Cut Oats

2 C Fresh Raspberries

White Chocolate Chips (a must!!) & more Fresh Raspberries for garnish!

Otherwise just mix everything in your prepared pot and cook on low for 5-8 hours!

Crockpot Turkey Chili

I want to start sharing some of my recipes here.... In print (to help you and me while grocery shopping hehe)

Here is my awesome recipe for an healthy & healthy Turkey Chili!

1-2 lbs browned ground turkey
20-28 oz diced tomatoes
30oz tomato sauce
2- 15.5 oz cans of drained & rinsed kidney beans
1 diced white onion
2-4 cloves minced garlic
1-2 cups frozen corn
Salt & pepper to taste
Chili Powder to taste

Cheddar cheese to top when serving

This recipe is super flexible and oh so good!!

Meal Plan (and lack thereof)

This week I didn't do one.

We are going on vacation very soon... so instead of making a meal plan I went to Costco with an open mind.  They had some produce on sale so I just bought it.... so until we leave we are just being creative and eating up what we have (I like leaving with an empty fridge!)

Sorry for the lack of a plan....

Any interest in our vacation meal plan?  Now that I have nailed down for weeks haha  ;-)

Banana Muffins (Healthy & Delicious!)




Ingredients

1 C Whole Wheat Flour
1/3 C Rolled Oats
1/4 C Flax
3/4 t Baking Soda
1/4 t Salt

3 Ripe Bananas
1/4 Plain or Honey Yogurt
1/2 C Applesauce
1 T Vanilla
2 Eggs

1/3 C or more Chopped Nuts (walnut is our fave)

Mix dry ingredients
then add wet and blend together
Add nuts, one final mix and bake at 350* for 12-15 minutes until a toothpick comes out clean!

I use Trader Joe's Honey Greek Yogurt
And I should mention that they don't easily come out of the wrapper when they're fresh out of the oven!  
They're easier after cooling (-:
They stay fresh for about two days (maybe longer?  They're never made it longer in our house... just cover them up!)
Our favorite way to eat them is warmed up with a bit of butter (-:

Minestrone Soup Recipe & Video How-To

Here is our Minestrone Soup recipe.  I think that it tastes a lot like Olive Garden's- only better because we add more of our favorite parts ;-)

3T Olive Oil
Medium Onion
Garlic (this is one that really depends on your family- we use lots ;-)

1 C Zucchini 
1 C fresh or frozen Green Beans
1/2-1 C Celery

4 C Vegetable Broth
4 C Water

1 Can Kidney Beans
1 Can White Kidney Beans
2 Cans diced Tomatoes (leave the juice)

1/2-1 C Shredded Carrot

2t Basil
2t Oregano
2t Salt (may need more or less to taste)
Pepper to taste

2-4 C Baby Spinach
1/2-1 C Small Pasta
